Green Eggs & Toast

There's nothing like the classic eggs + toast breakfast. But because we love to give our body all the nutrients she loves, we like to combine some greens into the story. For a more bitter bite, you can use mixed greens like in the photo. Thinking it might be a bit too much spice in the morning? Try a more mild green like spinach. Feel free to add in extra veggies as you please!



3-4 eggs

1/2-1 TBS coconut oil

1 small handful greens of choice

1-2 slices of toast, gluten-free or sprouted


Step 1: Get a pan nice and hot with your oil. Swirl it around. Think: the more oil you have to slick your pan, the less egg you have to clean out of your pan. 

Step 2: Add some greens. Cook them down until they're a little shriveled, and then crack in your eggs. Save yourself a dish by cracking them directly in the pan. Cover and cook on low for 5-8 mins.

Step 3: Flip when they're looking cooked and crisp on one side.

Step 4: Once finished, slide those babies out and toast up your bread. Either in the same pan, or in a toaster.
