Gluten-Free Pancakes with Honey

If you're anything like me and have steered away from The Gluten Life (because personally I don't like looking pregnant,) then you might have also tried all the hundreds of terribly expensive + disgusting gluten-free recipes for things like bread, waffles, pancakes, muffins, etc. Granted, some of them are reasonable, but some of them turn out downright terrible. This is an exception to that. You're welcome.


Ingredients:

3TBS ground flaxseed

1 egg

1 egg white

1 packet stevia

1/2 scoop protein powder (optional) 

2 TBS canned pumpkin OR 1/2 ripe banana

1/2 ripe banana

1-2 TBS cinnamon

Honey as needed

1/2-1 TBS coconut oil

Process:

Step 1: Heat up a pan with some coconut oil. Mix your ingredients & slowly pour your "batter" in (this will make about three). Cover & cook until bottom starts to brown around the edges and it bubbles.

Step 2: Flip those puppies carefully and cook until slightly toasted.

Step 3: Serve with all of the butter, nut butter, fruit, raw honey, or extra cinnamon. These ARE dense and filling so tread lightly!
