Chicken & Veggie Loaded Nachos

Prep time: 10-15 minutes
Pre-req: Cooked beef, chicken, pork, etc.
Cook time: 15 minutes

Serves: 2-4

When you were a kid, did you ever put nearly an entire bag of tortilla chips on a plate, smother it with shredded cheese, put it in the microwave & then inhale it like nobody's business?

And it was amazing, right?

Let's get all nostalgic-like but remain adult status like a boss with some added veggies & protein.


~1/2 bag tortilla chips, check the ingredients to make sure they're as real & wholesome as possible. I opted for the veggie tortilla chips because hey, a little spinach and beet powder can't hurt, right?

1/2-1 can black or green olives

1 diced tomato

1/2 diced green pepper

1 handful spinach/greens, just because

1-2 generous handfuls of pre-cooked chicken/beef

2-3 TBS canned/jarred salsa

1-2 TBS chopped red onion, finely diced

1-2 handfuls of high-quality shredded cheese (optional)

Ridiculous amounts of guac. Because duh.


Step 1. Preheat oven to 350 degrees Fahrenheit.

Step 2. Line a baking sheet with foil.

Step 3. Spread out some of those fab chips on the sheet.

Step 4: Add ingredients joyfully. Feel free to play around with different tastes such as:

- Feta, green olives, canned artichokes

- Tomatoes, mozzarella, fresh basil

- Ground beef, bacon, green onion

Step 5: Remember that any meat you add should be PRE-COOKED! Bake your chippies for 10-15 minutes until things become all nice and toasty.

Step 6: Dip in some guac. Because need we say more?
