Creamy Chicken Salad with Purple Sweets

If you don't like orange sweet potatoes, fear not, because nature created the Purple Sweet Potato (yes, it's that good I capitalize it). Purple sweets are often found at more specialty grocery stores like Sprouts, Trader Joe's or Whole Foods, so you might have to do some digging for them. Purple sweets are denser, sweeter, & more "cake-like" than orange. Basically, they're awesome.

As for the rest of the meal, it's basic as basic gets, but still delish. For the dressing, I like Brianna's salad dressing, or homemade is always good, but then that's turning this Lazy Woman Status into like a 3-4/10, and sometimes we're just not all about that life.


Ingredients:

1 large chicken breast, seasoned with herbs of your choice

2 small sweet potatoes

Large handful of mixed greens

Diced red onion

4 TBS of Brianna's salad dressing, or homemade dressing

Cinnamon as needed


Process:

Step 1. Preheat oven to 425 deg Fahrenheit.

Step 2. Line baking sheet with foil, add seasoned chicken breast & sweet potato, punctured a few times with a fork. Stab it like you mean it.

Step 3. Bake for 45-60 minutes, until fork easily goes through your purple sweets.

Step 4. Shred or dice the chicken & "squeeze" the sweet potato out of the skin once cooled.

Step 5. Dice up some red onion, throw a handful of greens on a plate, pile on some chicken, & deocrate with dressing.

Step 6. Add your side of purple sweets, add a dusting of cinnamon for fancy anti-inflammatory awesomeness.
