Chicken & Cabbage Tacos

Who doesn't like tacos? And second, who decided that tacos had to be terribly unhealthy for you? Okay - so maybe smothering our tacos with shredded cheese on top of sour cream on top of melted cheese is probably not the best way to get our taco selves on. Instead, we're adding a little flip & eating a veggie + protein taco that also tastes delish.

With this one, feel free to also add some hot sauce, guacamole, or even a sprinkle of cheese if you wanna get really wild with it. 


Ingredients:

2 taco shells

1 small roma tomato

1 small handful of mixed greens

1/2-1 TBS coconut oil

1 small handful of pre-diced cabbage & carrots (made for coleslaw)

2 small handfuls of pre-cooked chicken

Italian/taco seasoning

Process:

Step 1: Heat up a pan with coconut oil. Add tomatoes & cabbage, until warmed & cooked down a bit.

Step 2: Add in chicken + seasoning to the pan while heating up your taco shells in the microwave per box instructions.

Step 3: Fill those puppies up & add additional toppings as desired.
