Chicken with Garlic Quinoa

Ahh, quinoa, the holy grain of all the Health Nuts. Quinoa is a gluten-free, hearty, protein & fiber-packed grain that's mild in taste and goes well with pretty much any meat or veggie. In this variation, we pair it with some carrots & garlic for a delectable dish.
1/2 cup dry quinoa
8-10oz boneless, skinless chicken thighs
1/2lb baby carrots
3-10000+ cloves garlic (can you have too many?)
1 cup water
1 TBS olive oil/coconut oil
Step 1: Get your oven poppin' to around 400 degrees and line a baking sheet with foil. Heat up a small pan with olive oil or coconut oil for sauteing your garlic.
Step 2: Put your chicken thighs + carrots onto the lined baking sheet. Add some fancy seasonings to your chicken, and grease up your carrots with some olive oil.
Step 3: Combine 1 cup of water with 1/2 cup of quinoa and get it hot hot hot until it boils. Then reduce heat to a simmer for about 15 minutes, until fluffy and most of the water is gone.
Step 4: Chop up that garlic like a boss, then toss it in your pan until slightly browned.
Step 5: Once the quinoa is done, drain any excess liquid and mix in the garlic. Alternatively, you can put the quinoa in the pan where the garlic was cooking and swirl all that goodness around.
Step 6: Combine the chicken, carrots, & garlic quinoa in a bowl or all separately if you're weird about food touching or whatever. Either way it's delish.
