Beef Taco Salad

Serves: 1

Tell me somebody who doesn't love tortilla chips for lunch. Except in this variation, we're using those corny delights as a vehicle for some veggies and healthy fats. Win, win, right? You can sub out the meat for another variation if you're not into the whole beef thing. Even fish would probably work well here if you dig on the whole fish taco thing.


Ingredients:

1 small handful of tortilla chips (check ingredients, we don't need any ugly stuff in this temple)

6-8 large black olives, diced

1 small handful of spinach

1 generous handful of cooked ground beef, chicken, fish, etc.

1-2 small diced tomatoes

Sprinkles of some taco/italian seasoning

2-4TBS guacamole

Process:

Step 1: Layer some greens in a bowl or plate. 

Step 2: Dice up your ingredients, if needed.

Step 3: Throw it all on that bowl of greens. Add some seasonings & guacamole to make it extra awesome. Seriously, could this "cooking" thing get any easier?
