Black Bean & Veggie Bowl

This is a good "light" meal if you're not crazy hungry but you're craving some 100% veggie action. I don't usually do beans because they cause me some GI upset if I eat too many, so if you're like me, you can sub in some of the beans for chicken, beef, or other meaty protein. Or maybe, just opt-out of some protein at all and make it into a veggie + fat mid-day snack. 



6-8 mini peppers

6-8 baby tomatoes

1/2 cup black beans, or other protein source

1/2 avocado

2-3 TBS salsa

Generous sprinkle of italian seasoning


Step 1: Dice up tomatoes, avocado & peppers. Throw some diced red onion in there if you wanna!

Step 2: Pop open a can of beans, rinse, drain, and put about 1/2 cup in a bowl. 

Step 3: Combine veggies, avocado & beans. Top with salsa + seasoning.
