Peas & Plums Salad

Can I just confess that approximately 99% of my salad creations are literally just by-products of whatever is in my fridge? Rarely do I ever think, "huh, I want a salad with this, this & that, I'm gonna buy these ingredients and do that." Nope. It's more like, crap, what's on sale for produce that I'll eat? And then I just get all of that and hope for the best. 



1/2-1 cucumber

2 red plums

Large handful of spinach

2-3 TBS diced red onion

Small handful of thawed, previously frozen peas

2-4TBS raw walnuts

Generous handful of cooked chicken

1-2TBS olive oil

1-2TBS balsamic vinegar


Step 1: Chop up your veggies & fruits to your liking.

Step 2: Throw all that together. Add some oil + vinegar, or another (quality) dressing of your choice. Complicated, right?!
